Before his time in London, he opened and managed a cocktail bar in Dublin, winning the award for Best New Cocktail Bar at the Irish Craft Cocktail Awards. At age 22, the Irish pub he ran in Paris was nominated as The Best Irish Pub in the World by The Irish Times.
